- Dandies Peppermint Marshmallows
- 1 bag vegan chocolate chips
- 1 Tbsp coconut oil
- 1 cup chopped dark chocolate (You can sub chocolate chips, but a higher quality chocolate is preferred here)
- 1/2 cup non dairy milk
- 1 tsp vanilla
- 12 mini cupcake liners
Delightful little cups filled with melt in your mouth chocolate ganache and Peppermint Dandies.
In a microwave safe bowl combine chocolate chips, and coconut oil. Heat and stir in 30 second intervals until completely melted. Using the back of a spoon, brush a layer of melted chocolate in a mini cupcake liner, making sure all sides are covered. Repeat with the rest of the liners. Place on a tray and let harden in the refrigerator. To make the chocolate ganache, combine non dairy milk, chopped chocolate, and vanilla in a saucepan and melt on low heat. Once melted, transfer to a stand mixer and whip until smooth, and creamy. Remove chilled cups from the refrigerator and a little dollop of ganache in each one. Top with 3 Peppermint Dandies. Cover each cup with remaining melted chocolate (with coconut oil). For an optional garnish, top with 2 Peppermint Dandies and toast with a kitchen torch. Let harden in the freezer or refrigerator. Enjoy!
