- 1 10oz bag of Dandies Mini Marshmallows or Dandies Marshmallows
- Liquid from 1 can of Chickpeas
- 1 tsp Coconut Oil
Remember when Aquafaba Meringue first hit the internet and every vegan’s mind simultaneously exploded with vegan food science??? That was pretty awesome. Well, I’m happy to announce if you whip together aquafaba meringue with melted Dandies, you can have yourself some super versatile marshmallow fluff! Perfect for spreading on sandwiches. Pipes fantastically for cupcake frosting. Customize by adding some flavor extracts! You can even make your own peeps! The possibilities with this really are endless. So please, go forth, experiment, and create awesome delicious vegan stuff!
In a stand mixer whip aquafaba until fluffy peaks form in the meringue. Meanwhile in a microwave safe bowl combine coconut oil and marshmallows. In 30 second intervals, giving a quick stir between each, microwave until marshmallows have fully melted. Add marshmallow mixture into the stand mixer with the meringue and whip together until smooth. Store in an air tight container in the fridge for up to 5 days.
