Almond Crispy Treats Cupcakes Ingredients
- 5 cups Crisp Rice Cereal
- 2 Tbsp Coconut Oil
- 2 Tbsp vegan margarine (we like Earth Balance)
- 1 10oz bag of Dandies Mini Marshmallows or Dandies Marshmallows
- 1 tsp almond extract
- 12 raw almonds, optional (for garnish)
- 3 cups powdered sugar
- 1/2 cup vegan margarine (we like Earth Balance)
- 1 tsp vanilla extract
- 2 Tbsp lemon juice
- zest of one lemon
There are endless possibilities when dressing up crispy treats as cupcakes. Here we’re saying hello to Spring with these Lemon Almond Crispy Treats Cupcakes! The subtle almond flavor plays wonderfully with the perfectly tart lemon buttercream frosting. YUM!
Almond Crispy Treats Cupcakes Instructions
In a microwave safe bowl, combine Dandies, almond extract, margarine, and coconut oil. In 30 second intervals, with a quick stir between each, microwave until marshmallows are fully melted. Mix in cereal and stir until evenly coated with marshmallow cream. Press mixture into lined cupcake pan. Let cool and prepare frosting.
In a stand mixer combine 1/2 cup margarine, vanilla, lemon zest, lemon juice, and powdered sugar. Mix until thoroughly combined. Add more powdered sugar, if needed to reach desired consistency.
Once crispy treats cupcakes are cooled you can frost them. Optionally garnish with an almond on top for a little extra treat!
