Dandies Marshmallow Espresso Brownies

Ingredients

  • 1 Cup of Dandies Mini Marshmallows
  • 3 Tbsp water
  • 2 Tbsp ground flax seed
  • 1 3/4 cups all-purpose flour
  • 1/4 tsp baking soda
  • 6 Tbsp cocoa powder
  • 1/2 cup vegan chocolate chips
  • 2 Tbsp finely ground espresso
  • 1 tsp cinnamon
  • 3/4 tsp salt
  • 1/4 cup boiling water
  • 1 1/2 cups sugar
  • 8 Tbsp melted vegan margarine (we like Earth Balance)
  • 1 1/2 tsp vanilla extract
 

The best way to win over non-vegans is through the mystical power of delicious vegan brownies! These brownies are perfectly fudgy and totally comforting! The sweetness of the Dandies are so dreamy with the delicate hints of cinnamon and espresso.

Instructions

Preheat oven to 350 degrees. Line a 8x8 pan with parchment paper. In a cup mix together flaxseed and water and set aside. In bowl sift together flour and baking soda. In a seperate large bowl combine cocoa powder, espresso, chocolate chips, and salt. Slowly stir in boiling water and keep stirring until chocolate chips have melted and combined completely with the other ingredients. Mix in sugar, butter, vanilla, flax mixture, and flour mixture. Once batter is formed (it will be thick) add in marshmallows. Press it into the pan and bake for 25 minutes. Let cool completely! Cut into squares and enjoy!
